  • 1/4 cup rice flour optional, but traditional
  • A pinch of salt

Instructions
 

  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • In a separate bowl, combine the all-purpose flour, rice flour (if using), and a pinch of salt. Gradually add the dry ingredients to the butter-sugar mixture. Mix until the dough comes together and forms a soft, crumbly texture.
  • Transfer the dough onto a lightly floured surface and gently knead it a few times to ensure it is well combined. Shape the dough into a round disc, approximately 1 inch thick.
  • Wrap the dough in plastic wrap and refrigerate it for at least 30 minutes. Chilling the dough helps it hold its shape during baking.
  • Preheat the oven to 325°F (160°C).
  • Remove the chilled dough from the refrigerator and place it on a lightly greased baking sheet or a parchment paper-lined baking tray. Use a sharp knife to score the surface of the dough into desired shapes, such as rectangles or triangles.
  • Prick the surface of the dough with a fork to create small holes, which will prevent the shortbread from puffing up during baking.
  • Place the baking sheet in the preheated oven and bake for approximately 25-30 minutes, or until the edges of the shortbread turn golden brown.
  • Once baked, remove the shortbread from the oven and let it cool on a wire rack. As it cools, it will continue to firm up.
