Ingredients
- 1 pound dried navy beans
- 6 cups water
- 1 onion chopped
- 3 cloves garlic minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon dry mustard
- 1/4 cup molasses
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 2 teaspoons brown sugar
- 3 strips of bacon optional
Instructions
- Rinse and sort the navy beans, then soak them in water for at least 8 hours or overnight.
- Preheat oven to 325°F (165°C).
- In a large oven-safe pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until the onion is translucent, about 5 minutes.
- Drain the soaked beans and add them to the pot. Pour in 6 cups of water and add salt, pepper, thyme, basil, oregano, paprika, and dry mustard. Stir to combine.
- Bake in the oven, covered, for 2 hours.
- In a separate bowl, whisk together molasses, ketchup, Worcestershire sauce, apple cider vinegar, and brown sugar.
- After 2 hours, remove the pot from the oven and stir in the molasses mixture. Return the pot to the oven and bake, uncovered, for another hour, or until the beans are tender and the sauce has thickened.
- Serve hot with a garnish of bacon strips (optional).
