Chicken Marengo
Chicken Marengo is a classic French dish. You season and brown chicken, then make a tasty sauce with onions, garlic, wine, tomatoes, and herbs. Simmer the chicken in the sauce until it's cooked. Finish with fresh parsley and thyme for a flavorful meal perfect for a cozy dinner at home.
Ingredients
- 4 chicken breasts or thighs
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 large onion chopped
- 3 cloves garlic minced
- 1 cup dry white wine
- 1 can 14.5 oz diced tomatoes
- 2 tablespoons tomato paste
- 1 cup chicken broth
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh thyme
Instructions
- Season the chicken with salt and pepper and then coat in flour.
- Heat the olive oil in a large pan over medium heat. Add the chicken and cook until browned on both sides, about 5-7 minutes.
- Remove the chicken from the pan and set aside.
- In the same pan, add the onion and garlic and cook until softened, about 5 minutes.
- Add the white wine and bring to a boil, scraping the bottom of the pan to remove any browned bits.
- Stir in the diced tomatoes, tomato paste, and chicken broth. Bring to a boil and then reduce heat to a simmer.
- Return the chicken to the pan, cover, and cook until the chicken is cooked through, about 15-20 minutes.
- Serve the chicken topped with the sauce, sprinkled with parsley and thyme.
