I had for breakfast more paprika, and a sort of porridge of maize flour which they said was ‘mamaliga’, and eggplant stuffed with forcemeat, a very excellent dish, which they call ‘impletata”. (Mem., get recipe for this also.)
Maize Flour Porridge – mamaliga
A porridge made from maize flour, also known as mămăligă. It is a traditional Romanian side dish that complements the rich and savory flavors of the Impletata nicely.

- 1 cup yellow cornmeal
- 3 cup water
- 1/2 teaspoon salt
- 1 tablespoon butter optional
- 1/2 cup grated Romanian Telemea cheese or Parmesan cheese optional
Instructions
- Select a well-seasoned cast iron pot or skillet with a lid. The lid is essential for trapping steam and ensuring even cooking.
- In a separate pot, bring 3 cups of water to a boil. Add the salt to the boiling water.
- Gradually pour the cornmeal into the boiling water while stirring constantly to prevent lumps. Reduce the heat to low.
- Continue stirring the mixture for about 10-15 minutes, or until it thickens and starts to pull away from the sides of the pot. It should have the consistency of thick porridge or mashed potatoes.
- Carefully transfer the hot mămăligă into the prepared cast iron pot. Use a wooden spoon or spatula to spread it evenly, maintaining a round shape within the pot. If desired, sprinkle the cheese over the top of the mămăligă and gently press it down.
- Allow the mămăligă to cool and set in the cast iron pot for at least 30 minutes. This cooling time helps it retain its round shape and makes it easier to slice.
- To serve, gently cut the mămăligă into slices, like a pie. This recipe should yield 4-6 servings, depending on the portion size. Serve hot with various toppings, such as sour cream, cheese, or sautéed mushrooms, and enjoy your delicious mămăligă prepared in a cast iron pot!
